Almost Heaven...
NO, not West Virginia where my daughter went to schoo. I'm talking about cooking all day for my family. Today I prepared a nice Pho broth (for tomorrow), a mignonette sauce for oysters on the half shell, a nice beef and carrot accompaniement to pan seared scallops, spinach, and more for my family. It was great to prepare food again. Usually I'm too tired after getting home from work (the accounting job) to cook a great meal. Fortunately, during this holiday week I have time.

The food was yummy yummy. Too bad Child is too young to recognize good food. She had Kix (kid tested mother approved) for breakfast.

Note to readers...
I used a new cinnamon that I hadn't seen before. I picked it up on a Vietnamese store and decided to give it a try. Big mistake. It was way too strong and it left a very bitter taste in the broth. I dumped the whole batch of broth. Now we're going to have crab fried rice rather than pho.
